Malts: Smoked, Maris Otter, Rye, Oats, Pale Chocolate, Brown, Chocolate Rye, Black

Hops: Magnum, Fuggles

Yeast: BRY-97

Information

The chocolatey, roasty dark grains of a porter marry with rye spiciness and a wisp of smoke to produce a beer of unmistakable character. Heavily laden with malts from the peerless Weyermann maltings in Bamberg, Germany, this beer brings warmth and comfort to dark, chilly nights. Pull a chair up to the fire, find some good cheese and enjoy.


Smooth chocolate and dry, roasty coffee give way to an earthy beechwood smoke. Full, velvety mouthfeel and a lingering peppery finish.


What The Hell Was I Thinking?

The original idea was to do a smoked porter with peat smoked malt, but after many trials I concluded that the peat works much better with pale malts, and switched to hardwood smoked malt. The real breakthrough came when I realised how delicate the smoke flavour is and that adding the dark malts at the end of the mash allows the smoke to come through without being masked by the big roasty flavours.
